Gas steam tables are used in commercial kitchens to keep food warm for an extended period of time. It uses gas to heat water, creating steam that maintains the temperature of food. Dry bath steam tables have individual thermostats, therefore water pans are necessary to operate the table. Wet bath tables have a single burner to heat the entire table. No water pans are necessary with the wet bath steam tables.
